    Give the Serranos a good rinse and de-stem them.

    Saute onion and garlic and half of tomatillos over medium heat

    Once onion starts to brown add oregano, cumin, and ground pepper. Cook until fragrant

  4. 4

    Add in peppers, water, vinegar and salt and bring to simmer for 2 or 3 minutes

  5. 5

    Put remaining tomatillos in blender along with cilantro, lime and hot pepper mixture. Blend to desired consistency

    Use as salsa or drain through cheesecloth for hot sauce. Store in canning jar in fridge.
